Cauliflower Pizza Crust Ingredients:

  • Florets from 2 large organic heads of cauliflower, riced
  • 2 eggs, beaten
  • 8 oz fresh chevre goat cheese
  • 2 t. ground herbs de provence
  • 1/2 t. Salt
  • 1/2 t. Ground pepper

Cauliflower Pizza Crust Instructions

1. Preheat oven to 400F.

2. “Cauliflower rice” is made by pulsing raw cauliflower in a food processor or Vitamix; after a few minutes of pulsing, the texture will resemble rice.

3. In a 6 quart stock pot or sauce pan, boil about 2 inches of water until tender, about 8 minutes. Drain through a fine strainer.

4. Transfer the cauliflower rice to a nut milk bag (or fine weave dish towel). Wearing plastic gloves to protect your hands from the heat, squeeze all the moisture out of the cauliflower rice.

5. In a large bowl, mix the “rice”, beaten eggs, chevre, and ground spices. Use your hands if necessary to get it mixed evenly.

6. Line your baking sheet with oven proof parchment paper (so the pizza won’t stick). Create the desired shape of your pizza (round, rectangle, square), keeping the dough about 1/3″ thick and a little thicker along the edges if you want a “crust edge”.

7. Bake for 35-40 minutes at 400F. The crust should be firm, and golden brown when finished.

8. Add your favorite toppings. I used goat cheese jack (because I couldn’t find goat cheese mozzarella, which I will use next time), ground pork sausage, caramelized red onions topped with finely grated parmesan cheese. Return the pizza to the 400F oven for 10-12 minutes (or until done).

9. Slice and serve immediately! (Note: I find that the crust firms up after the pizza has time to cool a bit. So if you want to hold your pizza, I recommend cooling it & then reheating it to achieve that effect.

Enjoy!
