So stinkin’ creamy and they literally melt in your mouth.
YIELD: 12 large tarts | PREP TIME: 10 minutes | TOTAL TIME: 40 minutes | RECIPE BY: Abigail Kura
Ingredients
- finely chopped raw pecans
- almond flour
- organic vanilla extract
- shredded coconut
- organic cinnamon
- stevia, powder & liquid
- sea salt
- coconut butter
- coconut oil
- organic lemon extract
- lemon essential oil
Instructions
Crust:
•1 cup finely chopped pecans
•1 cup almond flour
•1 tsp vanilla extract
•2 Tbls shredded coconut
•1 tsp stevia, powdered
•1 tsp Cinnamon
•1/2 tsp sea salt
Blend all ingredients together and press to the bottom of large cupcake liners.
Lemon/Vanilla Filling:
•1/2 cup coconut butter, melted
•1/2 cup coconut oil, melted
•1 tsp vanilla extract
•2 1/4 tsp lemon extract
•4 drops of lemon essential oils (I used @younglivingeo because it’s one of the only edible ones)
•12 drops of liquid stevia
•Sprinkle of sea salt to taste
Combine all ingredients and pour over your crust.
Cool in the refrigerator until hardened (about 30 minutes). ENJOY!!
